Apricot and Almond
A moist sponge containing ground almonds and natural almond essence, it is filled with apricot jam and vanilla icing and topped with flaked almonds.
Marmalade & Cinnamon
A very moist and unusual cake. It is made with some wholemeal flour, marmalade and cinnamon in the sponge and is assembled with marmalade and a vanilla icing and topped off with demerara sugar.
Banana
This sponge is made using fresh bananas and then filled and topped with vanilla icing and topped with dried banana pieces.
Banana Fudge
This sponge is made using fresh bananas and then filled and topped with vanilla icing and clotted cream fudge pieces.
Orange
Like the Lemon sponge above this cake uses the rind and juice of fresh fruit in both the sponge mixture and icing.
Chocolate
The chocoholic’s favourite, a classic chocolate sponge made with some wholemeal flour, it is filled and decorated with chocolate icing and finished with Belgian chocolate buttons.
Victoria
This most traditional of all sponges is filled with strawberry jam and finished off with a sprinkling of caster sugar.
Coffee
A classic coffee flavoured sponge, filled and topped with coffee icing and sprinkled with vermicelli.
Victoria (Decorated)
A standard Victoria Sponge but this time it is filled with strawberry jam and vanilla icing, then topped with the same icing and decorated with sugar strands.
Honey
A lovely moist wholemeal cake made with honey instead of sugar it is filled and topped with honey icing.
Walnut & Coffee
Walnut sponge made with wholemeal flour, dark brown sugar and contains chopped walnuts, it is filled and decorated with coffee icing and topped with walnuts.
Lemon
A tangy lemon sponge and icing that contains shredded lemon rind in the sponge mixture and the rind and juice of the lemons in the icing.
Toddy Cake
This is a sponge with a difference using the flavours of the classic toddy drink for inspiration, it is filled with lemon and honey icing and topped with glace icing made with lemon and whisky.
